- Start by sautéing the onion, garlic and ginger in some cooking oil in a medium pot on medium heat until golden
- Add in all the spices and sauté them for a minute so they can release their flavour
- Add in the tomatoes, bouillon, maple syrup and salt and let it simmer on low heat for roughly 5 minutes
- Lastly add in the coconut milk, spinach, chickpeas and lemon juice and let it simmer for another 5 minutes
- Serve with some rice or naan. Garnish with cilantro
