Chickpea and Spinach Masala

This recipe is inspired by the Indian Tikka Masala. It is full of flavour from the surprising spices and can be made with ingredients found mostly in your kitchen pantry. It will be ready in no time and will leave you super satiated. Have it for dinner or prep this for tomorrow's lunch.

Prep time: 15 minutes

Servings: 2

Ingredients

- 1 can of chickpeas (drained and rinsed)

- 1 can of crushed tomatoes (400 grams)

- 120 ml of canned coconut milk

- 100 grams of fresh spinach (chopped)

- 1 white onion (finely diced)

- 3 garlic cloves (minced)

- 1 tbsp of fresh grated ginger

- ½ tsp of cumin

- ½ tsp of turmeric

- ½ tsp of chili flakes

- 1 tsp of garam masala

- 1 tsp of maple syrup

- 2 tbsp of fresh lemon juice

- 1 tbsp of vegetable bouillon paste or ½ cube

- salt to taste

- cooked rice or naan to serve

- fresh chopped cilantro to garnish

Instructions

  1. Start by sautéing the onion, garlic and ginger in some cooking oil in a medium pot on medium heat until golden
  2. Add in all the spices and sauté them for a minute so they can release their flavour
  3. Add in the tomatoes, bouillon, maple syrup and salt and let it simmer on low heat for roughly 5 minutes
  4. Lastly add in the coconut milk, spinach, chickpeas and lemon juice and let it simmer for another 5 minutes
  5. Serve with some rice or naan. Garnish with cilantro
