Chocolate Drizzled Fall Cookies

The perfect fall cookies to enjoy on a cold but sunny day. They are super easy to make and will be loved by everyone.

Prep time: 20 min

Servings: 9 cookies

Ingredients

Cookies

1/3 cup of coconut oil

1/2 cup of coconut sugar

1/8 cup of almond milk

1 tbsp of olive oil

2 tbsp of almond butter

1 and 1/2 cup of oat flour

1/2 cup of almond flour

1/2 tsp of baking powder

1/2 tsp of baking soda

1/2 tsp of vanilla essence

1 tsp of cinnamon

1/2 tsp of ground ginger

Pinch of sea salt

Chocolate Drizzle

40 grams of dark chocolate (70%)

1 tsp of coconut oil

Chopped pistachio's

Instructions

  1. Preheat your oven to 175 degrees Celsius
  2. Start by combining your coconut sugar, almond butter and coconut oil until smooth
  3. Add in the almond milk, cinnamon, ginger and vanilla and combine well
  4. Add in the flours one bit at a time and blend well until you reach a smooth and firm dough
  5. Next mix in the sea salt, baking powder, baking soda and olive oil
  6. Form the dough into 9 cookies
  7. Place on a baking sheet with parchment paper and bake for 12 minutes
  8. Let the cookies cool so they can firm up
  9. Make the chocolate drizzle: melt the chocolate with the coconut oil
  10. Drizzle the chocolate over the cooled cookies and sprinkle the pistachio’s on top
  11. Let the chocolate dry and enjoy!
