- Preheat your oven to 175 degrees Celsius
- Start by combining your coconut sugar, almond butter and coconut oil until smooth
- Add in the almond milk, cinnamon, ginger and vanilla and combine well
- Add in the flours one bit at a time and blend well until you reach a smooth and firm dough
- Next mix in the sea salt, baking powder, baking soda and olive oil
- Form the dough into 9 cookies
- Place on a baking sheet with parchment paper and bake for 12 minutes
- Let the cookies cool so they can firm up
- Make the chocolate drizzle: melt the chocolate with the coconut oil
- Drizzle the chocolate over the cooled cookies and sprinkle the pistachio’s on top
- Let the chocolate dry and enjoy!
