Classic Pomodoro Pasta

Classic Pomodoro Pasta

One of our favourites, such a classic but really comforting and flavourful. You can never go wrong with this delicious pasta dish.

Prep time: 20 min

Servings: 2

Ingredients

200 grams of spaghetti or fettucine

4 garlic cloves (minced)

2 tbsp of olive oil

1 can of crushed tomatoes

8 cherry tomatoes

1 tbsp of vegetable bouillon paste

salt to taste

a hand full of fresh basil (chopped)

Instructions

  1. Cook your pasta in salted water until nearly al dente (slightly undercooked)
  2. Drain de pasta and keep 1/8 cup of the cooking water
  3. In a large pan, sauté your garlic in olive oil on low heat until golden
  4. Add in the crushed tomatoes, cherry tomatoes and bouillon and bring to a soft simmer for 7 minutes
  5. Add in the fresh basil and let it simmer for another 3 minutes
  6. Add in the pasta and reserved cooking water and combine well
  7. Let it all cook until the pasta is al dente
  8. Serve with more basil, olive oil and sea salt on top
