Fluffy and Smooth Chocolate Mousse

This chocolate mousse is made with aquafaba. This is the liquid from a can of chickpeas and can be used to replace eggs plant-based recipes. This chocolate mousse is perfectly fluffy and smooth, just as it should be.

Prep time: 15 minutes

Cooling time: 2 hours

Servings: 4

Ingredients

- the liquid from 1 (400 gram) can of chickpeas

- 1 tbsp of lemon juice

- 150 grams of dark chocolate

- 4 tbsp of plant-based milk

- 4 tbsp of maple syrup

Instructions

  1. Start by whisking up the aquafaba, lemon juice and maple syrup in a bowl until you can hold the bowl upside down
  2. Melt the chocolate with the milk au bain-marie or in the microwave
  3. Slowly add the chocolate mixture to the aquafaba mixture until everything is nicely combined
  4. Pour it into 4 dessert cups and place in the fridge until it has set (about 2 hours)
  5. Serve with some chopped hazelnuts on top

How to store? Store it covered in the fridge for up to 3 days.
