Green Banana Pancakes

These pancakes are perfectly sweet and get their beautiful green colour from fresh spinach. They're super easy to make and so nourishing for the body. It was never easier to get in a portion of veggies at breakfast.

Prep time: 10 minutes

Serves: 5 pancakes

Ingredients

1,5 cup or 135g of oat flour

1 banana (peeled)

1 cup or 250ml of milk (soy, rice, almond...)

1 tsp of baking powder

50g of fresh spinach

Instructions

  1. Start by blending the milk, vanilla and spinach in a high-speed blender.
  2. Add the banana and blend
  3. Add the oat flour to the blender and pulse until the whole mixture is smooth.
  4. Heat some cooking oil in a non-sticking pan and 1/3 cup of batter to the pan.
  5. Fry the pancake on the one side until it is nicely browned and detaches easily, then flip.
  6. Fry on the other side until cooked through and repeat this process for the other pancakes.
  7. Serve with maple syrup and your favourite fruits on top

How to store? Store in a sealed container in the fridge for up to 2 days.
