- Start by soaking your cashews in hot water for 15 minutes
- Cook your penne in salted water for as long as instructed on the package
- In a pan sauté the sliced zucchini, asparagus and garlic in some olive oil for 8-10 minutes or until tender. Add a pinch of salt to the pan
- In a small blender add the soaked cashews along with the other Green Sauce ingredients and pulse until smooth
- Add the satuéed veggies and green sauce to the penne and combine
- Optionally top it off with some roasted pine nuts and fresh basil
