Green Spinach-Basil Pasta

This recipe is a Humbly classic but it has been updated. A beautiful green pasta with many different green veggies for a delicious, fresh and easy meal.

Prep time: 30 min

Servings: 4

Ingredients

Pasta

400 grams of penne

1 zucchini (sliced)

150 grams of green asparagus

100 grams of fresh spinach

1 garlic clove

Pinch of salt

Green Sauce

150 grams of soaked cashews

4 cups of fresh spinach

1 cup of fresh basil

Juice of 1/2 lemon

4 tbsp of olive oil

1 tsp of sea salt

Pinch of pepper

Instructions

  1. Start by soaking your cashews in hot water for 15 minutes
  2. Cook your penne in salted water for as long as instructed on the package
  3. In a pan sauté the sliced zucchini, asparagus and garlic in some olive oil for 8-10 minutes or until tender. Add a pinch of salt to the pan
  4. In a small blender add the soaked cashews along with the other Green Sauce ingredients and pulse until smooth
  5. Add the satuéed veggies and green sauce to the penne and combine
  6. Optionally top it off with some roasted pine nuts and fresh basil
