Healthy Edible Cookie Dough

This is such a great snack or dessert and it is super filling as well because it mainly made with chickpeas. This may sound strange but it is really divine.

Prep time: 15 minutes

Ingredients

- 1 400 gram can of chickpeas (drained rinsed and peeled*)

- ½ cup or 120 grams of almond or peanut butter

- 2 dates (pitted)

- 2 tbsp of coconut sugar

- 2 tsp of vanilla extract

- Pinch of sea salt

- 2-3 tbsp of almond milk*

- Large hand full of chocolate chips

Instructions

  1. Place the chickpeas in your food processor and pulse until they are mostly broken down
  2. Add in all the other ingredients apart from the chocolate chips and pulse until creamy, scrape down the sides of the food processor from time to time
  3. Lastly stir in the chocolate chips with a spoon
  4. Eat as it is or roll into small balls

How to store? Store in sealed container in the fridge for up to 6 days.

Morgane's tips

Peeling the chickpeas will give the cookie dough a creamier texture.
Use 1 tablespoon of almond milk at a time to blend, add more if necessary.
