Herbed White Bean Dip

Herbed White Bean Dip

Beans and greens should be part of your daily diet, but still we don't seem to eat enough of them. Beans scare lots of people because of their texture. This dip is the most delicious way to combine them both.

Prep time: 5 min

Ingredients

2 (400gr) cans of white beans

5 tbsp of olive oil

1 tsp of sea salt

1 garlic clove

Iced water to blend

Hand full of fresh basil, parsley and spinach

Instructions

  1. Drain and rinse the white beans
  2. Add them to a blender with the olive oil, sea salt and garlic and blend until smooth
  3. Add a little iced water if it’s too hard to blend
  4. Now add the basil, parsley and spinach and pulse a few times until the greens are almost broken down but there are still some pieces left
  5. Serve on toast, with crackers/crudité or on a salad.
