Humbly Banana Bread Granola

This granola has been a hit on my Instagram page and there’s a good reason for that. It has beautiful clusters which makes the granola super crunchy. The banana gives it a natural sweetness and extra flavour. It is also a great way to use up your overly ripe bananas.

Prep time: 35 minutes

Ingredients

- 1 overly ripe banana

- 1 and ½ cup or 135 grams of rolled oats

- 1 cup or 85 grams of oat flakes (or more rolled oats)

- 1/3 cup or 50 grams of chopped nuts and seeds of choice

- 3 tbsp of maple syrup

- 2 tbsp of melted coconut oil

- 1 tsp of vanilla extract

- ½ tsp of cinnamon

- ¼ tsp of ginger powder

- Pinch of sea salt

Instructions

  1. Preheat your oven to 170 degrees Celsius
  2. Mash the banana, coconut oil and maple syrup until smooth
  3. Add in all the remaining ingredients and combine until everything is evenly coated
  4. Press down the mixture on a baking tray with parchment paper
  5. Place in the oven for 30 minutes, carefully stirring the granola halfway through
  6. Let it cool before breaking up the granola into clusters

How to store? Store in a jar on your countertop for up to 7 days.
