Humbly Carrot Cake

The absolute very best plantbased carrot cake out there. It is perfectly sweet, fudgy and made with just the good stuff. Additionally, it is incredibly easy to make, so get baking!

Prep time: 10 min

Baking time: 45 min

Ingredients

3 cups of oat flour

1 cup of almond flour

3 tsp of baking powder

1,5 cup of coconut sugar

1 cup of almond milk

1 cup of smooth apple sauce

1 tsp of vanilla essence

1 tbsp of cinnamon

1/2 tsp of ground ginger

Pinch of sea salt

250 grams of finely grated carrots

Pecans and raisins to taste

Instructions

  1. Preheat your oven to 175 degrees Celsius
  2. In a large bowl combine the flours, baking powder, coconut sugar, cinnamon, ginger and salt
  3. In another bowl combine the almond milk, apple sauce and vanilla essence
  4. Add the wet mix to the dry bowl little by little and combine until smooth
  5. Stir in the grated carrots, pecans and raisins
  6. Pour the batter into a greased cake tin and place in the oven for 45 minutes
  7. When the cake is ready, let it cool on a rack
  8. Once the cake is cooled, cover it with your favorite frosting or glaze. I covered the carrot cake with a powdered sugar glaze
