- Preheat your oven to 175 degrees Celsius
- In a large bowl combine the flours, baking powder, coconut sugar, cinnamon, ginger and salt
- In another bowl combine the almond milk, apple sauce and vanilla essence
- Add the wet mix to the dry bowl little by little and combine until smooth
- Stir in the grated carrots, pecans and raisins
- Pour the batter into a greased cake tin and place in the oven for 45 minutes
- When the cake is ready, let it cool on a rack
- Once the cake is cooled, cover it with your favorite frosting or glaze. I covered the carrot cake with a powdered sugar glaze
