- Preheat your oven to 190 degrees Celsius
- Carefully make some cuts in the top of your eggplant slices
- Combine the remaining ingredients to make the dressing and brush it over the slices
- Place on baking tray and bake for 30 minutes or until crispy
- Garnish with sesame seeds and spring onions
