Miso Glazed Eggplant

Miso Glazed Eggplant

Such a perfectly sweet and savoury side dish to add to any of your favourite Asian meals.

Prep time: 35 minutes

Servings: 2

Ingredients

- 2 eggplants (sliced into thick rounds)

- 2 tbsp of maple syrup

- 1 tbsp of miso paste

- 2 tbsp of soy sauce

- 1 tsp of sriracha

- 3 tbsp of sesame oil

- 2 tbsp of sesame seeds and spring onions to garnish

Instructions

  1. Preheat your oven to 190 degrees Celsius
  2. Carefully make some cuts in the top of your eggplant slices
  3. Combine the remaining ingredients to make the dressing and brush it over the slices
  4. Place on baking tray and bake for 30 minutes or until crispy
  5. Garnish with sesame seeds and spring onions

How to store? Store in a sealed container in the fridge for up to 2 days.
