Pistachio Matcha Squares

BERNADETTE SERIES - These beautiful treats have a crust made from pistachio's and a filling with matcha, that both give this dessert a beautiful green colour. They are the perfectly sweet and fresh healthy treat.

Ingredients

Crust

250 grams of dates

150 grams of pistachios

4 tbsp of coconut oil

pinch of sea salt

Filling

200 grams of coconut oil

230 grams of coconut cream

juice of 1 lemon

100 ml of agave syrup

2 tbsp of matcha powder

150 grams of cashews (soaked in hot water for 1 hour)

Instructions

  1. Pulse all of the crust ingredients together in a food processor until crumbly and sticky
  2. Add the crust to a small tin with parchment paper and press down evenly
  3. Place the crust in the freezer while making the filling
  4. Add all of the filling ingredients to a high speeds blender and pulse until smooth
  5. Pour the filling over the cooled crust and place in the freezer again until it is hard (2 hours)
  6. Cut into cubes while still frozen and serve

How to store? Always store in a sealed container in your freezer.
