Pumpkin Brownies

Pumpkin Brownies

This brownie is made with pumpkin, which gives it a rich and fudgy texture. It is topped off with a chocolate ganache which is also made of pumpkin. Eating vegetables was never more delicious.

Prep time: 10 minutes

Baking time: 20 minutes

Ingredients

Brownie

1 cup or 250 grams of pumpkin puree*

- ½ cup or 45 grams of oat flour

- ½ cup or 120 grams of almond butter

- 1/3 cup or 60 grams of coconut sugar

- 1 tsp of vanilla extract

- ½ cup of cacao powder

- Pinch of sea salt

Ganache

- ½ cup or 125 grams of pumpkin puree

- 4 tbsp of cacao powder

- 5 tbsp of date paste or syrup

- 5 tbsp of coconut milk (the creamy part on top of a cooled can)

Instructions

  1. Preheat your oven to 175 degrees Celsius
  2. Blend all the brownie ingredients together in a high-speed blender or food processor
  3. Place the dough in a small brownie pan with parchment paper and bake for 20-24 minutes or until hardened
  4. Let it cool completely
  5. Blend all of the chocolate ganache ingredients together in a high-speed blender or food processor until smooth
  6. Place the ganache in the fridge until set
  7. Spread it on top of the cooled brownie
  8. Top it off with some chopped nuts

Morgane's tips

You can easily make pumpkin puree yourself. Simply slice a butternut in half lengthwise and scoop out the seeds.
Place the halves with their skin up on a baking tray with parchment paper and roast for 55 minutes on 190 degrees Celsius.
Let it cool, scoop out the pumpkin meat and blend in a food processor until smooth.
