Spinach Pesto Butter Beans

An easy and tasty dish that serves as a light lunch or a side dish. Full of fresh and healthy ingredients for a perfect quick meal.

Servings: 2

Ingredients

Butter Beans

1 (400 gram) can of butter beans (drained and rinsed)

200 grams of cherry tomatoes (halved)

250 grams of fresh spinach

2 garlic cloves (minced)

juice of 1/2 lemon

Walnut Spinach Pesto

25 grams or 1/4 cup of walnuts

3 tbsp of nutritional yeast

1/2 tsp of sea salt

60 ml of olive oil

1 hand full of fresh spinach

1 large hand full of fresh basil leaves

Instructions

  1. Make the pesto by pulsing all of the pesto ingredients together in a food processor. Blend until it reaches your desired consistency, either smooth or with some texture
  2. Sauté the garlic in a pan in some cooking oil for 2 minutes
  3. Add in the cherry tomatoes, butter beans and spinach and sauté for 8 minutes until everything is warm and the tomatoes are starting to melt
  4. Turn off the heat and add in the lemon juice and your desired amount of pesto
