Spinach Tortelloni in Tomato Sauce

Spinach Tortelloni in Tomato Sauce

Healthy fast food at its best. This pasta comes together in 15 minutes and is so comforting and delicious. I used my favorite plantbased Tortelloni by Fabrizio & Friends; read more about their products below.

Prep time: 15 minutes

Servings: 2

Ingredients

1 package of Fabrizio & Friends Tofu Spinach Quinoa Tortelloni

400 grams of passata

1 tbsp of olive oil

1 garlic clove (minced)

35 grams of cashews (soaked)

150 ml of unsweetened almond milk

3 tbsp of nutritional yeast

1 tbsp of veg bouillon paste

1 tbsp of dried basil

1/2 of Italian spice blend

Salt and pepper to taste

6 cherry tomatoes

100 grams of spinach

Instructions

  1. Soak the cashew in hot water for 30 minutes
  2. Add the soaked cashew to a blender with the almond milk, nutritional yeast and some salt and blend until smooth
  3. In a pan add the olive oil and garlic and sauté on low heat for 2 minutes
  4. Add the passata, bouillon paste and spices and let it simmer for 3 minutes
  5. Add in the cashew cream and let it simmer for another 2 minutes
  6. In the meantime cook the F&F Tortelloni for 2,5 minutes and drain
  7. Add in the cherry tomatoes, spinach and F&F Tortelloni and stir until the spinach is wilted
  8. Serve with fresh basil and vegan parmesan

I love the Tortelloni from Fabrizio & Friends. It is natural, organic and free from anything artificial. Their products are certified vegan and received a Nutriscore A. They make an effort to use mostly locally sourced products and produce the pasta right here in Belgium.

Good to know: you can freeze the pasta if it is about to expire. Throw the frozen tortelloni in salted boiling water to cook and let them cook a little longer if necessary.
