Stuffed Date Chocolate Truffles

This can hardly be called a recipe but it is too good not to share. Stuffing naturally sweet dates with almond butter covered in chocolate is what sweet dreams are made of.

Prep time: 5 minutes

Cooling time: 1 hour

Servings: 5 truffles

Ingredients

- 5 Medjool dates* (pitted)

- Pinch of sea salt

- 5 tbsp of almond butter

- 50 grams of dark chocolate

- 1 tsp of coconut oil

Instructions

  1. Slice the dates lengthwise and fill the middle with almond butter and a pinch of sea salt
  2. Place them in the freezer for 1 hour or until hard
  3. Melt the chocolate and coconut oil au bain-marie or in the microwave and pour it over the dates
  4. Cool it in the fridge for roughly 15 minutes or until the chocolate has hardened

Optional: top it with some chopped almonds for an extra crunch

How to store? Store in a sealed container in the fridge for up to 2 weeks or in a bag in the freezer for up to 1 month.

Morgane's tips

Medjool dates work best in this recipe as they have a great texture.
