Vegan Tiramisu

Vegan Tiramisu

I have always been such a big tiramisu fan so I tried to create one that is just as rich as the original. The result came out great and is loved at my house.

Prep time: 15 minutes

Cooling time: 4 hours

Servings: 4

Ingredients

- Neutral tea biscuits or lotus Speculoos cookies

- 1 large cup or 300 ml of strong coffee

- 300 grams of silken tofu (other kinds of tofu don’t work)

- ½ cup or 145 grams of coconut cream (the hard on top of the cooled can)

- 1 tsp vanilla extract

- 4 tbsp of maple syrup

Instructions

  1. Start by blending the silken tofu, coconut cream, vanilla and maple in a food processor or blender until smooth
  2. Soak your biscuits in coffee and place them on the bottom of your dessert cups
  3. Add a layer of the cream filling and then another layer of soaked biscuits
  4. Continue this until the cups are full
  5. Place in the fridge for roughly 4 hours or until the cream has set
  6. Top it off with some cacao powder
