Vegan Tofu and Chickpea Omelette

This omelette is an easy savory breakfast option or a quick lunch and tastes just like the real thing. It is made with just the good stuff for a wholesome meal.

Prep time: 15 min

Servings: 2

Ingredients

350 grams of silken tofu

2 tbsp of nutritional yeast

3 tbsp of chickpea flour

2 tbsp of corn flour

4 tbsp of unsweetened almond milk

1/4 tsp of turmeric powder

1/2 tsp of paprika powder

1/2 tsp of onion powder

1/4 tsp of garlic powder

1/2 tsp of sea salt

2 tbsp of cooking oil

Fillings of choice: wilted spinach, cherry tomatoes, vegan feta cheese, green onion

Instructions

  1. Add the silken tofu and unsweetened almond milk to a blender and pulse until you reach a smooth batter
  2. Add the corn flour, chickpea flour, nutritional yeast and spices and pulse until you reach a smooth batter
  3. Heat the cooking oil in a non-sticking pan on medium heat and add half of the batter to the pan
  4. Place a lid on the pan and let it cook until the omelette is firm and can be flipped over (4 minutes)
  5. Cook the omelette on the other side for another 2 minutes
  6. When the omelette is ready, stuff it with your fillings of choice
