- Add the silken tofu and unsweetened almond milk to a blender and pulse until you reach a smooth batter
- Add the corn flour, chickpea flour, nutritional yeast and spices and pulse until you reach a smooth batter
- Heat the cooking oil in a non-sticking pan on medium heat and add half of the batter to the pan
- Place a lid on the pan and let it cook until the omelette is firm and can be flipped over (4 minutes)
- Cook the omelette on the other side for another 2 minutes
- When the omelette is ready, stuff it with your fillings of choice
