
Drinks: Kombucha Cranberry Mocktail
This drink is sweet, delicious and helps your stomach to settle before eating all the Christmas food. Kombucha is a fermented drink that benefits our digestion. Add a shot of gin to the mocktail to make it a cocktail.
What you need: 1 mocktail
- 1 tsp of elderflower syrup
- 50 ml of cranberry juice
- 100 ml of kombucha
- 1 tbsp of pomegrenate seeds
- sprig of thyme

Instructions:
Add all the ingredients to a beautiful glass in the order listed above.

Appetizers: Creamy Stuffed Mushrooms Bites
These creamy filled chestnut mushrooms are a real dream; so easy to make and they look super sofisticated. All you need to do for this recipe is fill the mushrooms and pop them in the oven. Well kind of, read the steps below.
What you need: 5 servings
- 250 grams of chestnut mushrooms (hollowed out)
- 150 grams of vegan cream cheese (Garlic & Herbs spread by Nush) OR the Creamy Ricotta Spread from my cookbook The Radiant Table
- 1 tsp of garlic powder
- pinch of s&p
- 1 hand of basil leaves (chopped)

Instructions:
Combine the cream cheese, garlic, s&p and basil. Fill the hollowed out mushrooms with the spread and place on a baking sheet. Bake for 15 minutes at 215 Celsius.

Main Course: Truffled Butternut and Mushroom Risotto
This recipe requires minimal effort but always leaves dinner guests impressed. It is tasty, comforting and nourishing.
What you need: 5 servings
- 1 white onion (chopped)
- 1 garlic clove (minced)
- 500 grams of arborio rice
- 750 ml of vegetable broth
- 500 ml of unsweetened almond milk
- 250 grams of sliced chestnut mushrooms
- 150 grams of fresh spinach
- 250 grams of cubed butternut squash
- 2 tbsp of truffle paste
- 6 tbsp of nutritional yeast
- Parsley and pine nuts to serve

Dessert: Christmas Tree with Apricot Filling
This beautiful dessert requires only 3 ingredients and takes a minimal effort to make.
What you need:
- 2 sheets of vegan puff pastry
- Apricot Jam
- 1 tbsp of almond milk
- Powdered sugar and berries to serve

Instructions:
Place the two sheets on top of one another. Cut them into the shape of a Christmas tree (watch our Christmas video for more instructions). Take the top layer of puff pastry off and cover the bottom layer with a generous serving of apricot jam. Place the top layer back on and cover with a little almond milk. Twist the branches of the tree. Place in the oven and bake for 20 minutes at 180 Celsius. Dust the tree with powdered sugar and serve with berries.
